Ingredients

1 pound lean ground turkey
1 onion, coarsely chopped
2 cloves garlic, minced
1 red bell pepper, coarsely chopped
1 rib celery, coarsely chopped
1 tsp. paprika
1/8 tsp. ground cumin
2 tsp. chili powder
1 can chopped plum tomatoes in juice
1 cup chicken broth
1 bay leaf
salt and pepper to taste
Directions
Heat saucepan over high heat and coat with cooking spray. Add turkey and season to taste with salt and pepper. Cook until browned. Remove turkey and cover.
Reduce heat to medium and add onion, garlic, red pepper and celery, stirring until they begin to soften (about 3 minutes). Add paprika, cumin and chili powder and cook a bit more until softened through.
Add tomatoes, chicken broth and bay leaf. Bring to a boil over high heat. Reduce heat to medium-low and simmer for 20 minutes, uncovered.
Add the browned turkey and simmer 5 minutes more. Discard bay leaf before serving.
