Introduction

Ingredients

    4.5 C Oat flour
    10 tsp baking powder
    2 tsp baking soda
    1/4 c brownsugar splenda
    1/4 c splenda
    3 tsp cinnamon
    1/4 tsp nutmeg
    3 tsp vanilla
    2 eggs
    3/4 c melted butter
    7-8 mashed bananas

Tips

I took a traditional banana bread recipie, added cinnamon and nutmeg, replaced all purpose flour with my own oatmeal I processed into flour, searched for a hint on conversions and added the baking powder and replaced the sugar with a mix of brown sugar splenda and splenda. And hoped for the best!


Directions

Pre-heat oven to 350. Start by mashing bananas in a large bowl. I dumped everything else into the banana mixture except for butter and flour at this point and mixed it all in then added butter and stirred well the added the flour slowly, however the recipe I used for inspiration had the following instructions. Add cinnamon, nutmeg, vanilla, eggs, and sugars, mix well. Stir in butter. add baking soda and baking powder and mix well. Slowly add flour and mix well. Pour into 2 loaf pans sprayed with cooking spray and bake about 45min to 1 hour.

Serving Size: makes 2 loaves slice into 12 slices each
