Ingredients
2 Tbsp butter, melted
2 Tbsp applesauce
¼ c coconut sugar
1 egg
1 tsp vanilla
¼ c water/soymilk/other liquid
½ c low-fat small curd cottage cheese
½ c cooked sweet potato, mashed
1/4 cup white flour
1/2 cup coconut flour
1/4 cup oat flour
1 tsp baking powder
1 c chocolate chips
Tips
Can put in cranberries, nuts, whatever you want instead of chocolate chips. I used a mix of flours to keep it lower carb than usual, and could change up the proportions if its not to taste.
Directions
Combine first 8 ingredients in a bowl and mix well.
Add flour and baking powder and stir until just combined.
Stir in the chocolate chips.
Scoop into muffin tins with paper liners and bake at 350 degrees for 30 min.
Serving Size: makes about one cupcake pan, i.e. 12 muffins
