Imagine Organic Low Sodium Chicken Broth, 4 cup
Kroger Fat Free Less Sodium Clear Chicken Broth, 2 serving
Onions, raw, 200 grams
Carrots, raw, 150 grams
Celery, raw, 150 grams
Kuner's Black Beans No Salt Added (1 can is 3.5 servings), 3.5 serving
Lotus Foods Bhutan Red Rice (1 serv is 1/3cup/60g), 120 gram
Jalapeno Peppers, 1 pepper
*Canola Oil, 1 tbsp
Garlic, 3 clove
Yellow Sweet Corn, Frozen, 100 grams
1 tsp salt
1/2 tsp black pepper
1/2 tsp oregano
Scallions, chopped
Directions
Evenly dice onion, carrots, and celery. Dice jalapeno. Crush and chop garlic.
Open beans and rinse.
Add oil to a stock pot. Once oil is warmed, add onion, carrots, celery and salt and cook until vegetables start to brown, about 5 minutes.
Add jalapeno and cook another 1-2 minutes. Add garlic, cook another 1 minute.
Add corn and rice and cook for 2 minutes. Add stock, beans, and spices.
Cover and cook until rice is cooked through, approximately 20-30 minutes.
Remove from heat. Just prior to serving (white still hot), add lime juice, scallions, and cilantro.
Serving Size: Makes 4 servings
