Introduction
Delicious! Delicious!Number of Servings: 4
Ingredients
-
1 Package Ziggy's Cheese and Spinach Ravioli
12 oz pre-cooked frozen shrimp
2 cups (or more!) of fresh spinach
1 can diced tomato (I like Aylmer's Accents), drained
Half a package (1/2 cup) of light phili cream cheese (can use any flavour you like except no fruit)
2 Cloves garlic, minced.
Red pepper flakes - 1 tsp
Tips
Can be garnished with fresh parsley, or Parmesan cheese (not included in nutrition).
Directions
Cook the pasta as per the instructions on the package.
Meanwhile, heat a large skillet to medium heat. Add the cream cheese and let melt, stirring often so the cheese doesn't burn and stick to the pan. Add garlic if you like.
When the cheese has mostly melted, add the can of tomatoes. Stir to combine. I like to add red pepper flakes here. Cook for 1 or 2 minutes.
Add spinach and shrimp. Stir until spinach has wilted and shrimp is hot. Turn off heat.
Drain cooked pasta, add to shrimp mixture and stir to combine.
Serve immediately.
