Ingredients

3 cups fresh brined sauerkraut
1 good sized pork hock.
100 gm side pork (or bacon if you can not find side pork)
1 medium onion, diced
1/4 teaspoon black pepper
6 cloves garlic
2 tablespoons butter
1 large bay leaf (1/4 tsp crumbled)
1 tsp caraway seeds
4 cups water * or about enough to cover the meat and cabbage as it simmers.
Tips
The longer it simmers, the more tender the meat will be. This is nice when served with mashed potatoes.
Directions
1) Rinse the brined sauerkraut well, with running water. Strain and set aside.
2) In a heavy pot, fry the side pork. Once it starts to brown nicely, remove it from the pot and set it aside.
3) Fry the onion with the butter, in the same pot that the pork fried in. Once it starts to turn golden, add the side pork back to the pot, and add the well rinsed sauerkraut and pork hock.
4) Add enough water to cover the meat and cabbage. Add the garlic, pepper, bay leaf, and caraway seed.
5) Let everything simmer slowly on medium low, for about 2+1/2 to 3 hours, adding water as needed to help it simmer.
