Ingredients


    *1 med yellow onion, 2 serving
    Garlic, 8 clove
    Carrots, raw, 2 cup, chopped
    Celery, raw, 2 cup, strips
    *Lightlife Smart Sausage Italian Style, 4 serving
    2 cartons of Imagine Organic Vegetable Broth, 8 cup total (remove)
    *2 small cans of Tomato Paste, 20 tbsp total
    2 40 oz cans of Great Northern Beans 18 cups total
    *Tomatoes, red, ripe, raw, year round average, 8 medium whole (2-3/5" dia)
    *coconut oil raw organic xtra virgin artisana, 2 tbsp

Tips

1. for no fat alternative pull the coconut oil and use some broth.
2. thyme and parsely to taste.

this was adapted from the book happy herbivore abroad. the quantities in that book are considerably small than this.


Directions

1. dice the onions, garlic and all of the sausage (sliced) saute in the coconut oil in a large stock pot (at least 3 gallon) till onions are translucent.
2. add carrots and celery and saute for a little longer...2 minutes
3. add the broth bring to a boil, then back to simmer cook till the carrots are fork tender.
4. dice and add the tomatos, and tomato paste. cook a little longer...4 minutes
5. add the beans and any other ingredients that i messed.

Serving Size: makes 20 2 cup servings (2.5 Gallons)
