Ingredients

2 large boneless skinless chicken breast
1 green bell pepper, cut into strips
4 Sweet mini peppers, cut into strips
1 onion, cut into strips
1 tsp Nolan Ryan's Fajita Seasoning (or to taste)
1 can Rotel tomatoes, drained
1 spray of olive oil to cover bottom of crock pot.
Tips
I like to eat this mixture (undrained) over rice as well. It's yummy either way.
Directions
Spray bottom of crock pot with olive oil spray
Season both sides of each chicken breast with Fajita Seasoning
Slice onions and peppers into strips and place in crock pot
Sprinkle with Fajita Seasoning
Pour drained Rotel tomatoes over onions and peppers.
Place chicken breast on top of Rotel tomatoes.
Place lid on crock pot and slow cook on high for about 5 hours
Shred chicken with 2 forks.
Serve chicken and drained onions peppers and tomatoes on flour or corn tortillas and fajita toppings of choice.
