Ingredients

    1 cup non-fat Greek plain yogurt
    1 large eEnglish cucumber, peeled and seeded
    1 tsp extra virgin olive oil
    2 tsp lemon juice
    1-2 cloves garlic, minced finely or pressed
    salt and pepper to taste

Tips

For thicker tzatziki, strain yogurt in cheese cloth or coffee filter for 8 hours before making.


Directions

Grate cucumber. Place in center of a clean dish towel and squeeze over sink until no more juice can be extracted. Combine all ingredients, blend. refrigerate for 1 hr prior to serving to let flavors combine.
