Ingredients

4 large eggs
2 egg whites
1 Tofurky Andouille Sausage
.5 c shredded cheddar
Directions
Chop the Tofurkey sausage and saute in pan with olive oil spray.
Scramble eggs and egg whites. (I added a splash of soymilk not listed in calories.)
Spray a muffin tin with olive oil spray. Divide the sausage into the bottom of each muffin cup. Put three tablespoons of the egg mixture into each cup. Top with cheese.
Bake for about ten minutes. Let cool.
Freeze if you need them for later!
I'm going to play with the spices for this one. Maybe add some cayenne, garlic... I just wanted to do a test run first!
