Ingredients

    1.5 - 2 lbs sockeye salmon
    3 Tbsp dijon mustard
    3/4 cup panko (or breadcrumbs)
    3/4 cup chopped fresh parsley
    salt & pepper to taste (not calculated)

Directions

Spread mustard on fish. Top with mix of panko and chopped fresh parsley. Bake at 350 for 30-40 min.

    Very Good
    Very easy, fast, and yummy! I am not usually a salmon fan, but we had some that needed to be used up. It took about 10 minutes to prep and only 20 minutes to cook because I used some pre-packaged, frozen salmon from Costco. They' are thinner and cook faster. We will make it again soon! - 3/31/10
