Introduction

Ingredients

    1.5 pounds boneless, skinless chicken breast
    1 teaspoon paprika
    8 thin lemon slices
    1/3 cup honey
    1/3 cup spicy brown mustard (or plain yellow mustard)
    1 teaspoon dehydrated onion
    1/2 teaspoon lemon juice
    1/2 teaspoon curry powder

Directions

Rinse chicken, pat dry, and cut into bite sized pieces. Put in an 8x8 microwavable dish or the equivalent round dish. Sprinkle with paprika. Place lemon slices on top of chicken, evenly spaced. Cover with wax paper and microwave on high for 6 to 7 minutes, rearranging chicken pieces after 4 minutes. If not done, cook on high up to another 5 minutes. When done, pour off excess liquid if there is any.
While the chicken is cooking, combine honey, mustard, onion, lemon juice & curry powder in a small saucepan and stir well. Cook on medium until hot and bubbly. Spoon over cooked chicken. If you don't have a stovetop, you can combine ingredients in a microwave safe bowl and microwave on high for 3 minutes, or until hot, then pour over cooked chicken.
Serve over the rice of your choice.
