Introduction

Ingredients

    2 tblsp olive oil
    1/2 chopped onion
    2 cloves garlic pressed or chopped
    1 15oz. jar of Roasted red peppers chopped
    1 cup chicken or vegetable broth
    1/2 cup fat free half and half
    salt and pepper to taste

Tips

You may like to add some fresh herbs such as basil or parsley when you add the broth and if serving over pasta some parmesan cheese would be delicious.


Directions

sauté onions and garlic in the olive oil over medium heat, stirring occasionally for about 2-3 mins. or until they soften, add chopped roasted red peppers and let cook another 2-3 mins. Remove from the heat and pour into a blender or food processor, blending until smooth consistency.
Return the mixture to pan and add, salt and pepper, and broth. Simmer for a few minutes and then add half and half. Heat through
Serve over pasta, chicken or fish

Serving Size: should make about (4) 4 oz. servings
