I got this recipe from ifoodreal.com, but omitted the Parmesan because I didn't have any, and down-scaled the recipe a bit.

Number of Servings: 3

Ingredients

    6 mushrooms
    1/2 medium onion
    1 tbsp parsley
    pinch of salt
    pinch of pepper
    1 small clove garlic, minced
    1/4 mozzarella, shredded
    1 1/2 tbsp mayonnaise





Tips

Mayo can be substituted for sour cream, or greek yogurt.


Directions

Preheat oven to 400F/205C
Rinse mushrooms, and pat dry. Pull out stems and set aside. Place caps in a baking dish.
Chop stems finely
Chop onion finely
Saute stems and onion, until lightly browned.
In a bowl, combine onion mixture and the rest of the ingredients. Combine with fork until mixture holds together. May add more or less mayo, depending.
Using a teaspoon, spoon mixture into the caps.
Bake for 20 minutes

Serving Size: makes 3- 2 piece servings
