Ingredients

    Tofu, 1 block, extra-firm
    Fresh Spinach, 4 oz
    Fresh Assorted Mushrooms, 1 3/4 lbs
    Olive Oil, 3 Tbsp
    Fantastic Foods Tofu Scramble seasoning mix, 1 packet

Directions

Mix tofu scramble seasoning with fork-mashed tofu and set aside. Saute mushrooms in olive oil. Once they have cooked down, add spinach and put lid on pot for 2 minutes. Stir spinach into mushrooms, stir in tofu mixture until warm.

Serving Size: makes 4 1-cup servings
