Ingredients

1 1/4 cups long-grain white rice (not instant)
3 tbsp butter
2 cups (20 ounce can) crushed pineapple
1/2 tsp salt
1 3/4 cups water
1/2 cup light brown sugar, firmly packed
1/4 tsp ground nutmeg
Directions
In a medium saucepan, melt butter over medium-low heat; cook rice, stirring, for 3 to 4 minutes. Drain pineapple, reserving 1/4 cup syrup. Add syrup, salt, and water to saucepan with rice; bring to a boil.
Reduce heat; cover and simmer for 15 to 20 minutes, or until rice is tender and water is absorbed. Stir in pineapple, sugar, and nutmeg until well blended. Transfer to lightly buttered 1 1/2-quart casserole dish. Cover and bake at 400° for 20 minutes. Makes 6 servings of about 3/4 cup each.
