Introduction

Guilt-free, low carb, low cal, gluten-free cheesecake, no baking required! Obviously to maintainthe GF status you will have to use only GF ingredients. My favorite GF crust is made by smashing up GF cookies and using in place of graham crackers in a standard graham cracker crust. However, this is delicious crust-free also and nobody ever guesses there's tofu in it, its that good! Guilt-free, low carb, low cal, gluten-free cheesecake, no baking required! Ingredients

    1 block soft tofu
    16 oz fat free cream cheese
    1/3-1/2 cup sugar
    3T unsweetened cocoa powder
    2 oz melted chocolate (dark is delicious!)
    1T vanilla extract
    1 tub cool whip lite

    Crust optional.

Directions

Blend tofu, cream cheese and sugar until blended.
Add vanilla.
Melt chocolate. Mix melted chocolate and cocoa powder into batter.
Mix until smooth and uniform in color.
Gently mix in cool whip (don't mix too hard or cool whip deflates).

Pour mixture into serving dishes (or crust) and refrigerate for at least 1 hour.
Makes 10-12 servings.
