Ingredients

1 cup unsweetened cocoa powder (Dutch processed preferred)
3/4 cup cane sugar (increase to 1 cup if not using Dutch cocoa)
2 teaspoons vanilla extract
1/2 teaspoon ground cloves
1/4 teaspoon chili powder
Pinch of salt
Pinch of cardamom
1 cup cold water
Tips
You can use any extract here that you want - mint, orange, almond... the list goes on! Just be sure not to add it over the direct heat, else it'll funk with the flavor!
Directions
Mix the spices, salt, cocoa, and sugar in a small saucepot, removing as many lumps as possible (you can sift this if you want, but it's not necessary).
Add water, mix, and heat on medium to medium high. Bring to a boil and reduce heat to low, stirring, for a minute or so until slightly thickened.
Remove from heat and let cool for 5 minutes. Stir in vanilla extract. Store in an airtight container (I use a mason jar) and refrigerate for later use.
Serving Size: makes 1.5 cups (24 Tablespoons), 12 2-Tablespoon servings
