Ingredients

    Ingredients:
    Olive oil, 1 tbs
    Lentils, 1 cup
    Onions, raw, 1 cup, chopped
    Kitchen Basic Unsalted Vegetable Stock, 4 cup
    Spinach, fresh, 6 oz package
    Garlic, 3 clove
    Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 2 cans
    Oregano, 1 tsp
    Basil, 1 tsp
    Water, tap, 3.5 cup
    Salt and pepper to taste

Tips

I soaked the lentils overnight. It's not needed but if you don't you may need more water.


Directions

Sauted diced onions in 1 tbs olive oil for a few minutes then add spinach and garlic. Cook until spinach is wilted. Add tomatoes, stock, lentils, and dried spices.

Bring to a boil. Lower heat, cover and simmer 30 minutes.
