Ingredients

    1 head cauliflower - chopped in food processor
    1/2 cucumber, peeled and diced
    1/2 red bell pepper, diced
    1/4 red onion, diced
    1 medium carrot, grated
    2 roma tomatoes, seeded and chopped
    1 large handful fresh cilantro, chopped
    2 sprigs dill, chopped

    2 cloves garlic minced
    1/3 cup lemon or lime juice (or mix of both)
    2 Tbs extra virgin olive oil
    1/4 tsp ground black pepper
    1/4 tsp salt

Tips

Serve with large chard, collard, or lettuce leaves to make your own wraps.


Directions

Mix vegetables and herbs in a large bowl. Whisk together the garlic, lemon/lime juice, olive oil, salt & pepper. Pour over vegetable mixture and toss well. Cover and refrigerate for 2 hours before serving.
