Ingredients

1/2 cup thawed frozen strawberries or peaches
1 egg
1/8 cup flour
1/8 cup milk
Parkay Spray Margarine
Sugar Free Syrup
2 tbsp Redi Whip Low Calorie
Tips
Optionally, you can substitute splenda or truvia for the sugar and higher protein lower carb flours for the white flour, as well as almond or skim milk for even less calories. Honey might be nice for the syrup sub for more nutrition.
Directions
Beat 1 egg till bubbly. Stir in milk and flour. Spray Parkay, 5 squirts into Small round baking dish. I used tiny cast iron skillet. Pour egg mixture into sprayed pan. Bake in oven preheated to 400 degrees for 20 minutes. While baking, take 1/2 cup frozen fruit of your choice and cook in microwave 2 minutes. When pancake is done, it will have puffed up. Add fruit, syrup and whipped topping. Add cinnamon sprinkling if desired.
