Introduction

Number of Servings: 12

Ingredients

    1 heaping cup pumpkin puree
    2 eggs
    1/4 cup Greek yogurt (2%)
    1 apple shredded
    1/3 cup water
    1 tsp. Vanilla extract
    1/4 cup sugar
    1/2 cup brown sugar
    1/2 cup almond flour
    1/4 cup flax meal
    1 cup whole wheat flour
    3/4 tsp baking soda
    1 Tbls. Pumpkin pie spice (Penzeys preferably)
    1/2 cup finely chopped pecans or walnuts

Tips

You can freeze the left overs...if there are any!


Directions

Gently mix 1st 8 ingredients. In a separate bowl whisk all the rest of the ingredients. Add dry to wet 1/2 cup at a time. Mix low just until combined. I used my stand mixer on stir. Prepare muffin tin with spray. Bake 20 to 25 minutes. Check at 20 minutes with a toothpick.

Serving Size: makes 12 good sized muffins
