Ingredients

Tips
Reduce salt for a lower sodium meal
I like to use a medium size portabello (about 2" diameter) and usually buy them at Trader Joe's (a package of 6 - i use three for this recipe).
I used a 16 oz package of Trader Joe's fresh organic string beans. Frozen strings beans work as well
Use water if you don't have chicken stock
Substitute or add zucchini for variety.
Directions
Prep vegetables:
cut string beans into 1"-2" pieces
slice onion
slice mushrooms
slice garlic
Coat a large skillet with about 2 tbsp of olive oil and add string beans. Let them cook on medium heat for a few minutes and then add the onions, garlic, and about 1/2 of the salt. Stir, put a lid on the pan and let the vegetables simmer, stirring occasionally. When onions begin to caramelize, add the chicken stock put the lid back on and let them simmer another 5-10 minutes. Remove vegetables from pan, put in another 2 tbsp of olive oil - add mushrooms and remaining salt. Saute until tender, put the vegetables back into the pan and toss with the mushrooms. Let it simmer on low for another 5 minutes or so; or until string beans reach desired tenderness.
