Ingredients

    14 oz chicken or veg. broth
    3/4 cup basmati or jasmine rice
    grated lemon zest (1 tbsp or about 1/2 a lemon)
    1 tbsp ginger or a 2" piece fresh, peeled split & smashed
    1/4 tsp salt
    13.5 oz can unsweetened coconut milk

Tips

I like to let this sit another 5 mins. covered w/the heat off. Then stir one last time & serve. You can use low fat coconut milk but it's really not as great that way.


Directions

Heat broth to a boil on high. Stir in rice, lemon, ginger & salt. Cover, reduce heat to low & cook until broth is absorbed (8-10 mins). Add coconut milk; cover & return to a boil over low heat, cook stirring often until tender & most of the milk has been absorbed (8-10 mins). Remove lemongrass & fresh ginger b/f serving.
