Introduction

This is a nice sweet, crispy snack/dessert when eating clean. This is a nice sweet, crispy snack/dessert when eating clean.
Number of Servings: 18

Ingredients

    Add 3 cups of crispy rice cereal. I use a brown rice cereal, but you can use whatever you can find - just make sure its low in sugar.
    1-2 scoops of vanilla whey protein powder - brand doesn't matter
    1 cup oats
    1/4 cup chopped almonds
    1/2 cup xylitol (sugar substitute) - Splenda may substitute
    3/4 cup Almond Butter
    1/2 cup honey

Directions

In large bowl, combine crispy rice, protein powder, almonds, and oats.

In a medium bowl, combine almond butter and honey and microwave for about 30 seconds to make it soft. Add xylitol and mix so its all combined.

Add the wet ingredients to the dry and stir with a spatula. Pour the mixture into a 9 x 13 glass pyrex dish and press down with your fingers - make sure all of the almond butter mixture is evenly distributed and there aren't dry spots.

Place the pyrex dish in the freezer and let harden for 1-2 hours - then cut into bars or break off pieces.

Serving Size: Makes 18 servings
