Ingredients

Canola cooking spray
Eggplant sliced lengthwise, 3 1/2 inch thick slices
3 Tbls pizza sauce, I like Ragu Pizza Quick Sauce
12 baby spinach leaves
3 Tbls chopped or sliced onion
1/4 cup Italian bread crumbs
1/4 cup panko bread crumbs
Salt, black pepper, Adobo seasoning and cayenne to taste
Tips
I like spicy food so I sometimes add jalapenos. Yum!
Directions
Preheat oven to 450 degrees
Spray a cookie sheet with cooking spray.
Spray both sides of the eggplant with cooking spray lightly and dip first in the Italian bread crumbs and then in the panko bread crumbs. Bake for 20 minutes.
Remove from oven and spread pizza sauce evenly between eggplant. Top with onion, spinach and shredded Parmesan cheese. Add salt, peppers and adobo seasoning to taste. Return to oven and broil until cheese is melted.
