    1 cup onion chopped, 1 serving(remove)
    Ginger Root, 1 tsp(remove)
    Garlic, 3 cloves(remove)

    Coconut Milk (Silk), 1 cup(remove)
    Spinach, fresh, 1 package (10 oz)(remove)
    Chickpeas (garbanzo beans), 1.5 cup(remove)
    *Cumin seed, 1 tsp(remove)
    *Garam Masala, 1 tbsp(remove)




Directions

Cook the onion with the garlic and ginger in a pan with spray oil if you want it. Sprinkle the spices (cumin, garama masala, curry powder...whatever you have...cinnamon is good in this too!) After 2-3 minutes, add the spinach (or whatever greens you have) and the rinsed chickpeas. Add a little water and simmer for another several minutes. Add the can of coconut milk in, simmer, and you are done!
