Ingredients

    Zucchini
    Fresh mushrooms
    Canned muschrooms
    Ricotta cheese
    Light mozzarella
    Homemade tomato sauce

Directions

Slic zucchini lengthwise into 4 strip. Place on backing pan, spray with non-stick spray, then put in 375 degree oven until slightly brown. Sautee the fresh mushrooms in 1 tblsp of olive oil.

Place a few tblsps of tomato sauce on the botton of a pans, place a layer of zucchini on the sauce.

The dot with ricotta and some mozzarella. Pour more sauce, add mushrooms (mixed) then auce, rictoaa, mozarella dn sime shredded parmesean.

Bake at 350 for an hour - drain off some of the liquid after baking.

    I made this with cottage cheese instead of ricotta because that is what I had. It was very good. I cut the zucchini 3/4 thick. I will cut it thinner next time. This was incredibly easy and healthy. - 9/29/10
