Tips
Using hand blender, when cooled, blend until smooth. Serve with whole grain bread or bun. Add hemp hearts reduced fat powder if desired for extra protein.
Directions
In a large (Dutch oven) pot, heat oil over medium heat. Add onions, garlic, mushrooms. Cook until tender. Gradually add rest of veggies, stirring after each. Add enough water to steam. Add spices and remainder of water. Simmer 3 hours.
