Introduction

Number of Servings: 16

Ingredients

    4 large eggs
    1 cup Xylitol sweetener
    1 cup almond pulp
    1 cup cocoa powder
    .5 cup coconut oil

Tips

you may wish to drizzle melted unsweetened dark chocolate and sprinkle with cacao nibs - yum!


Directions

beat eggs and zylitol with hand held mixer till fluffy (about 5 mins)
Combine almond pulp and coconut oil in small saucepan over medium/low heat until warm to touch.
Add to egg mixture and beat until just combined
Add cocoa powder and mix until just combined
Pour mixture into lined 20cm square pan
Bake in preheated oven at 180 deg Celcius for 20 mins or until surface is matt. do not overbake.
Allow to cool in pan then cut into 16 pieces
Keep at room temperature for up to 3 days or refrigerate for a lot longer (if they last!) I like mine cool.

Serving Size: makes 16 x 5cm pieces
