Ingredients

    2 eggs (beat)
    1/4 cup baby spinich
    Red onion (diced)
    3-4 grape tomatoes (quartered)

Tips

I add garlic, and some pepper occasionally. Also very good with diced bell peppers and mushrooms.


Directions

Spray olive oil into pan, beat eggs, blend all ingredients and scramble over medium heat.
