Ingredients

1 Tbsp Olive Oil
8 cups vertically sliced yellow onion (about 2 pounds) - slicing this way increases release of flavor.
5 cups sliced shiitake mushroom caps (about 10 ounces whole mushrooms
4 garlic cloves, minced
2 tsp thyme (or 2 thyme sprigs)
1/2 cup dry white wine
32 oz organic beef broth
1/2 tsp freshly ground black pepper.
Directions
1. Heat oil in large Dutch oven over medium heat. Add onion to pan; sauté 15 minutes or until almost tender, stirring frequently. Reduce heat to medium - low, cook until deep golden brown (about 40 minutes), stir occasionally.
2. Increase heat to medium, Add mushrooms to pan, cook for 10 minutes or until mushrooms are tender, stirring frequently,
3. Stir in garlic and thyme, cook for 2 minutes, increase heat to med-high.
4. Add wine to pan, cook for 2 minutes or until most of liquid evaporates
5. Add broth to pan, bring to simmer. Reduce heat and simmer 45 minutes. Stir in pepper.
6. Ladle 1/2 cup servings out into bowls. (not included by can make cheese toasts for topping)
