Ingredients

    Puree 2 medium, ripe avocados in food processor until smooth. Add truvia sweetener, vanilla, salt, and lemon juice, (optional), and mix again. Melt 1 cup of Guittard Dark Chocolate chips in microwave safe bowl, 30 sec. intervals until softened completely. Scoop pureed avocado mix into softened chocolate, and mix well by hand. Cool slightly in refrigerator- 5-10 min. Then, with a cookie scoop, drop tablespoons of chocolate in to a mini cupcake tray lined with decorative paper liners. Sprinkle with sea salt or decorative edible sprinkles. Refrigerate, covered, until set and transfer to air-tight container and keep in refrigerator. Remove to warm up 15-20 minutes before serving, (or serve right from frig. cold)

Tips

You can alternatively chill mixture in refrigerator until firm, & then roll truffles into balls, and coat with sprinkles, powdered cocoa or powdered sugar. Store them in frig. in air-tight container.


Directions

No cooking, just refrigerate in air tight container to keep them fresh.
