    3 Tbsp balsamic vinegar
    2 tsp Dijon mustard
    1 large garlic clove(s), crushed
    1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
    2 cup mushroom(s), small, halved
    1/3 cup canned chicken broth
    1/4 tsp dried thyme, crumbled
    1 tbsp Extra Virgin Olive Oil


Preheat oven to 400 degrees.

In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.

Transfer chicken and marinade to baking pan. Cook for 20 minutes or until the juices run clear.

Heat the oil in skillet. Saute mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.

Serve chicken topped with mushrooms.

    Very easy to make! Very tasty! I added a red onion in with the mushrooms and served it over couscous. I expected it to have a stronger flavor. I would probably add more thyme and black pepper in the future. Yum! - 10/19/16

  • Easy, peasy and a good healthy version of the chicken masalas. Put it over rice with a salad, umm, uum, good! Dijon is my favorite mustard and just had to add my jalapeno peppers! - 7/16/17

  • I used fresh thyme instead of dried. Will make again, wth some tweaks, because it definitely needed something. I'm thinking adding salt, pepper, and fresh thyme in the chicken marinade, and shallots to the mushrooms would fix this right up. I served over mushroom risotto and grilled asparagus. - 7/15/17
