An easy, tasty dinner. An easy, tasty dinner.
Number of Servings: 4

    3 Tbsp balsamic vinegar
    2 tsp Dijon mustard
    1 large garlic clove(s), crushed
1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
    2 cup mushroom(s), small, halved
    1/3 cup canned chicken broth
    1/4 tsp dried thyme, crumbled
1 tbsp Extra Virgin Olive Oil

Preheat oven to 400 degrees.

In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.

Transfer chicken and marinade to baking pan. Cook for 20 minutes or until the juices run clear.

Heat the oil in skillet. Saute mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.

Serve chicken topped with mushrooms.

  • Very easy to make! Very tasty! I added a red onion in with the mushrooms and served it over couscous. I expected it to have a stronger flavor. I would probably add more thyme and black pepper in the future. Yum! - 10/19/16

  • Doesn't say what temperature to bake the chicken; 350 doesn't seem high enough for only 20 minutes. - 7/26/15

  • Pretty good chicken dish. Will make it again with maybe a tweak or two. Thank you for the recipe. - 3/8/14

  • Step three above says "heat remaining teaspoon of oil..." but there is no oil mentioned in the ingredients, and none calculated in the calories. - 2/13/13
