Ingredients

    1 pound ground sirloin
    1 small white onion, chopped
    2 clove garlic, crushed
    1/2 cup green pepper, chopped
    3/4 cup red pepper, chopped
    1 1/2 cups Great Northern Beans, cooked or (1/2 cup dry measure)
    1/2 cup Muir Glen Organic Fire Roasted Tomatoes, diced
    1 cup Green Giant Whole Kernel Corn
    1 tsp. EVO with herbs
    1 tsp. dried Thyme
    1 tsp. dried Paprika
    1 tsp. Chili Powder
    2 tsp. dried Basil
    1 tsp. dried Oregano
    1/4 tsp. Chipotle Pepper, dried, ground
    18 Black Kalamata Olives, diced
    6 Tbsp. Kraft 2% Mexican Four Cheeses
    4 oz. Tostitos Garlic and Black Bean Chips (6 chips per serving)





Tips

You can make this chili meat sauce as mild or hot by adjusting the Chili Powder and Chipotle Pepper to your heat preference.


Directions

The night before: Soak 1.5 cups Great Northern Beans in 4 cups water overnight. Rinse thoroughly and add 4 cups water with Knorr Vegetable Cube or beef broth. Simmer for 1.5 hours or until tender. Do not stir to prevent bean casings from falling off. Add more water to beans during cooking if needed to keep covered.
Spray large skillet with grapeseed oil and sauté 1 pound ground sirloin with chopped onion, garlic, green peppers, and spices. Gently mash 1 1/2 cup cooked Great Northern Beans and add 2 tsp. herbed EVO and stir to mix. Add to meat mixture. Add organic tomatoes, chopped red pepper and cooked kernel corn. Add 6 Tostito Garlic and Black Bean Chips to a microwavable dish. Add 1 cup chili meat sauce over chips, sprinkle with 3 diced Kalamata olives and 1 Tbsp. Mexican Four Cheeses. Microwave for 1 minute on power level #3 and serve immediately with fresh salad.
