Introduction

A delicious, roasted, sweet sauce that will never have you missing tomatoes! Great over your favourite noodle, fish or veggie! Freezes very well, so multiply away! Ingredients

    5 red peppers, seeded and chopped
    1 large sweet onion, chopped
    10 cloves garlic, peeled but left whole
    2 tbsp. olive oil
    1/4 cup water
    1 tsp lemon juice
    1 tsp. dried oregano
    1 tsp. dried basil
    1 tsp. cumin
    1 tsp. thyme
    salt + pepper

Directions

Preheat oven to 350°F.
Place peppers, onion and garlic cloves into a 9" x 13" baking pan.
Drizzle with olive oil and toss well.
Put in oven and roast for about 45 minutes.
Pour vegetables, all the black bits and the juices into a saucepan.
Add water and seasonings and puree with an immersion blender (alternately transfer everything to a blender and puree smooth).
Heat as for regular sauce.

    Incredible!
    SO easy, and SO deliscious! This recipe has lots of flexibility for alterations according to taste, and is also very versatile. It was great as a spaghetti sauce, but I also loved it mixed with some black beans and cheese! - 6/14/12
