Ingredients

    *Extra Virgin Olive Oil, 1 tbsp
    Chorizo, pork and beef, 5 oz chopped
    Onions, raw, 1 medium (2-1/2" dia) peeled and chopped
    Celery, raw, 2 stalk, large (11"-12" long) chopped
    Garlic, 2 clove crushed
    Chickpeas (garbanzo beans), 2 cup
    Canned Tomatoes, 2 can (remove)
    *Aldi Chicken Quixo Stock Cube (1 Cube), 1 serving
    Water, tap, 3 cup (30 fl oz)
    Salt, 1 dash
    Pepper, black, 1 dash
    Spinach, fresh, 1 package (10 oz) (can substitute other greens)

Directions

Saute chorizo in olive oil until oil turns red then add the onion, celery and garlic, cover and cook gently for 10 minutes.

Add remaining ingredients except spinach and cook 20 minutes.

Add spinach and cook 2 minutes. If using cabbage or other greens first blanch them then add to soup.
