    2 tbsp olive oil
    1 medium onion
    3 cloves of garlic, minced
    1/4tsp ground chipolte chili pepper
    3 cups of low sodium chicken broth
    2tbsp chopped or dried cilantro
    3tbsp lime juice
    2 avocados peeled and seed removed
    3 cups long grain white rice (pre cooked)
    16 oz boneless chicken breast baked and shredded


cook your rice and chicken ahead of time


In a medium saucepan, heat olive oil over med heat. Add onion and garlic. Cook for about 5 minutes or until onion is soft. Add the chipolte chili pepper and cook for about 1 minute. Stir in the chicken broth, cilantro and lime juice. Cut avocados lengthwise. Discard seed and scoop out avocado. add to saucepan. pour avocado mixture into blender. process til smooth. return mixture to saucepan. stir in precooked chicken breasts (shredded) and precooked rice. Cook on low heat for 5 minutes
