Ingredients

    1 lb ground turkey
    1 large egg
    1 package fat free shredded mozzarella cheese
    1 container low fat ricotta cheese
    1/2 cup grated parmesan cheese
    2 cups of organic baby spinach
    1 jar of organic pasta sauce
    1/2-1 cup of water
    12 whole wheat lasagna noodles, uncooked
    **oregano to taste**

Directions

1. Preheat oven to 350 degrees. Spray 13X9 baking dish with cooking spray. Set aside.

2. Brown turkey meat in large skillet on medium-high heat.

3. Other prep while turkey is cooking; mix egg, 1 1/4 cups fat free mozzarella cheese, low fat ricotta cheese (entire container), 1/4 cup parmesan cheese, and 2 cups of spinach until well blended.

4. Drain meat, then return to skillet. Stir in organic pasta sauce. Add 1/2-1 cup of water to emtpy sauce jar; cover with lid and shake well and pour on meat sauce.

5. Spread 1 cup of sauce onto bottom of pan; top with 1 layer of whole wheat lasagna noodles (using 3 noodles), 1/3 ricotta mixture and 1 cup of sauce. Repeat layers roughly 3 times.

6. Top with remaining 3 noodles and sauce. Sprinkle the remainder of mozzarella cheese from bag and other 1/4 cup of parmesan. Cover with foil.

7. Bake 45 minutes. Remove foil, and bake for an additional 15 minutes.
