Ingredients

    1 Tbsp Fish Sauce
    3 Tbsp Lime Juice, fresh squeezed
    2 Tbsp Stevia in the Raw (baking -cup for cup)
    1/2 tsp cornstarch
    1/2 Tbsp Thai Chili Sauce
    1 Tbsp peanut butter
    1 tsp Garlic
    1 Scallion, raw, sliced
    1/2 c Bean sprouts
    3 oz Chicken Breast, cooked and diced
    1 Tbsp Cilantro, raw
    1 Tbsp Peanuts, dry-roasted, chopped
    1/4 c Carrots, raw grated
    1 bag Nasoya Pasta Zero Plus Shirataki Fettuccine
    olive oil spray

Tips

You could eliminate the high sodium by substituting water for the fish sauce. It won't have the same authentic flavor, but it would cut the majority of the sodium. You can also use a pinch of red pepper flakes instead of the chili sauce.


Directions

In a small bowl, mix fish sauce, lime juice, stevia, chili sauce, peanut butter and cornstarch.
Spray sauté pan with oil. Heat to medium high. Thoroughly rinse Shirataki in a strainer. Saute in pan 1 min. Add chicken, carrots, scallions and stir-fry 1 min.
Pour in sauce and stir to distribute. Heat 1 min while stirring until sauce thickens and bubbles.
Plate and top with cilantro and peanuts.

Serving Size: makes 1 huge serving or 2 for lunch
