Number of Servings: 24

Ingredients

    Ingredients:

    3 Eggs,
    2 Egg whites only
    1/4 cup Yogurt, Vanilla fat free
    1 cup apple sauce no sugar added
    1 cup Brown Sugar, packed
    2 cups Flour
    2 tsp Cinnamon
    1.5 tsp Baking Powder
    1.5 tsp Baking Soda
    4 tbsp Flax Seed Meal (ground flax)
    2 tbsp any whey protein powder
    1/2 tsp Salt,
    1/2 cup Pineapple, canned, crushed
    1/2 cup Raisins
    3 cups Carrots, grated

Directions

Pre heat oven to 350, line or spray muffin tins

Combine first 5 ingredients.
Sift together dry ingredients, add to egg mixture. Spoon in Pineapple, carrots and Raisins

Bake for approx 20 minutes.

    As with any recipes you need to make it more than once to perfect it to your oven and measuring tools. But for a first try, this was the bomb! I loved them and my hubbie raved about them. Oh, I added 1/2 cup of walnuts so I have to adjust the caloric and nutritional value but they were fantastic. - 4/12/09
