Introduction

My version of our favorite cheesecake ever. My version of our favorite cheesecake ever.
Number of Servings: 16

Ingredients

    Crust:
    128 grams graham cracker crumbs
    5 T. butter

    Filling:
    3 8oz. pkgs neufchatel cheese
    3/4 cup agave syrup
    5 eggs
    1.5 tsp. vanilla
    about 2 oz. chocolate chips (Ghirardelli 60% cacao)

    Frosting:
    6 oz. Ghirardelli 60% cacao chocolate chips
    1/2 cup plain non-fat Greek yogurt

Tips

Can also be made in two pie pans, but may need to make extra crust mixture.


Directions

Mix graham cracker crumbs with melted butter, and press into bottom of springform pan.
Beat room temperature neufchatel cheese and agave. Add eggs ONE AT A TIME, and beat till smooth. Add vanilla. Pour over crust. Drop chocolate chips into filling.
Bake at 300ºF for 60-70 minutes, until set.
Chill before frosting.
To make frosting, melt chocolate chips in microwave, then stir in yogurt until smooth and creamy. Frost, and then chill.
