Ingredients

    Chicken Breast (cooked), no skin, roasted, 12 ounces
    Bread Crumbs Panko, 0.75 cup
    Parmesan Cheese, grated, 0.25 cup
    Extra Virgin Olive Oil, 2 tbsp
    *Hunt's Tomato Sauce, no salt added, 1 cup
    Egg white, fresh, 2 large
    Salt, substitute: Morton, Salt Substitute, 1/4 tsp
    Pepper, black, 1 dash
    Parsley, 3 tbsp

Directions

Preheat oven to 450°. Spray a large baking sheet lightly with Pam spray.
Combine breadcrumbs, S & P to taste, parsley and parmesan cheese in a bowl.
Whip the egg whites a bit.
Dredge chicken in the egg whites and coat in bread crumbs, and place on baking sheet.
Lightly spray a little more Pam on top and bake in the oven for 20 minutes.
Turn chicken over, bake another 5 minutes.
Remove from oven, spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
Bake 5 more minutes or until cheese is melted.
Serve over any pasta of your choice.
