Ingredients

    Apple Mix
    2 TBS butter
    4 cups peeled and chopped apples
    2 TBS sugar
    1 tsp molasses
    1 tsp. cinnamon
    1/4 cup apple cider (or apple cider vinegar)

    Oatmeal Mix
    2 Tb. butter
    1 cup whole milk
    1 cup unsweetened applesauce
    2 eggs
    3/4 cup sugar
    1 TBS. molasses
    1 TBS cinnamon
    1/2 tsp. nutmeg
    1 tsp salt
    2 tsp. vanilla
    3 cups old fashioned oats

    Streusel Mix
    4 TBS butter, cold, cut into small pieces
    1/4 cup gluten free flour (starch based)
    1/2 cup old fashion oats
    1/4 cup sugar
    1 tsp. molasses
    1/2 tsp. salt
    1/2 tsp. baking powder

Directions

1) Preheat oven to 375 degrees. Grease a 9 X 13 casserole.

2) In a skillet over medium heat, cook Apple Mix until apples are soft and liquid is reduced, about 10 minutes.

3) In a bowl, combine Oatmeal Mix ingredients. Stir Apple Mix into Oatmeal Mix.

4) In a small bowl, mix Streusel ingredients with a fork into pea sized crumbs.

5) Pour Apple/Oatmeal mix into casserole. Top with Streusel. Bake at 375 F degrees for about 30-35 minutes

Serving Size: makes a 9X13 casserole, 12 servings
