Introduction

Number of Servings: 12

Ingredients

    2 1/4 cups all-purpose flour (you can use whole wheat)
    2 tsp. baking powder
    1/2 cup flax meal (groud flax seeds, can be replaced or mixed with chia meal)
    1tbsp. ground cinnamon
    1 tsp. ground nutmeg
    1 tsp. salt

    5 bananas medium size
    1/2 cup brown sugar, packed
    1 egg (you can skip this ingredient for vegan muffins)
    1 tsp vanilla
    1 cup coconut milk (or almond milk, or soy milk)

Tips

You can easily make this recipe vegan.


Directions

Preheat oven at 375

Mix all dry ingredients

Mash bananas
Add brown sugar, vanilla and mix
Add the egg and mix well

Add dry ingredients in banana mix, alternate with milk until everything is blended.

Pour mixture into muffin pan.

Cook 18-25 minutes.
Ready when inderted toothpick comes out clean :)
