Ingredients

    1/3 cup butter, unsalted, softened
    4 oz unsweetened applesauce (one snack cup)
    1 cup brown sugar, loose
    1/2 cup granulated sugar
    1 large egg
    1 tsp vanilla extract
    1 cup all-purpose flour
    1/2 cup whole wheat flour
    1 tsp baking soda
    1/2 tsp salt
    1 tsp ground cinnamon
    2 cups oats such as Quaker Old-Fashioned
    1 cup raisins
    1/2 cup finely chopped walnuts

Directions

Preheat oven to 350 degrees. Cream together butter and sugars in mixer. Add applesauce, egg, and vanilla, mix. In separate bowl, mix flours, soda, salt, and cinnamon. Add flour mix to mixer bowl with butter/sugar, mix at low speed until combined. Stir in oats, raisins, and walnuts with wooden spoon. Drop cookies on cookie sheet in 2-inch balls, flatten slightly. Cook at 350 degrees for 9-11 minutes. Let cool.
