Ingredients

3 large chicken breast halves 1.5 LB ground
(I ground my own)
1 cup panko
1 Lemon ,zested and juiced.
1 Tsp kosher salt
1/4 cup fresh chopped parsley
3 Tbsp fresh Thyme or 1 Tbsp dried.
2 Tbsp grated parmesan cheese
A small amount of flour for dusting the polpettines.
for frying : use 2 Tbsp olive oil
3 Tbsp unsalted butter or just olive oil .
Directions
In a lagre bowl mix all ingredients exept oil and butter. Pour some flour on a baking sheet,form tablespoon size balls, flatten slightly and coat on flour.
Heat oil and butter in skillet fry until golden brown 4-5 minutes on each side. serve immediately.
NOTE: polpettines are not served with a tomato sauce or gravy, rather salad greens and cannellini beans
I made a Spark recipe ,Broccoli and Cauliflower casserole.
Serving Size: makes 30 polpettines ,serves 5 at 6 each
