Ingredients

    4 large or 6 medium cooked shrimp, cut into small pieces
    1.5 cups leftover (day-old or more) steamed rice
    1 large egg (I use veggie-fed)
    4 scallions, sliced
    1 tbsp canola oil
    1 tbsp soy sauce
    1 garlic clove, minced, or 1 tsp powder
    1/2- 1 tsp sesame oil
    1/2 tsp chile oil
    1/4 tsp white pepper (don't use black)



Directions

Heat canola oil in a large wok over medium-high heat and scramble the eggs in it. Add the garlic and chile oil to the eggs while they are scrambling. Add the rice, shrimp, and soy sauce and stir-fry briefly, letting the rice stick from time to time to get the crunchy bits. Add rest of ingredients (which, by the way, are not set in stone amount-wise) and stir-fry until it is heated through. Serve immediately.
