Introduction

A simple hearty meal great for those cold winter nights or simply when you just want something easy to whip up. I loved this as a kid when my mom made it. I just made some "healthier" substitutions, but it's still very hearty and it's definitely a recipe you can make your own, hope you enjoy! Ingredients

    1 DelGrosso Pepperoni Spaghetti Sauce
    1 lb. 93% Lean Ground Turkey
    2 (dry) cups Whole Wheat Elbow Macaroni
    Kraft Velveeta made with 2% Milk.
    1/2 White Onion
    1 tsp. Cayenne or Red Pepper Flakes (optional)
    2 tsp. Italian Seasoning (optional)

Tips

I know Velveeta is high in sodium and I plan on experimenting with better cheeses. This cheese was used based on tradition and ease of melting, please feel free to substitute, it will bring the sodium way down and may make taste even better! To be honest, I had no idea until I calculated all of this that sodium was going to be that high, but I'm ready to retool! Please post what works for you.

This makes 4 very large servings, you can use the same recipe and put it in a bigger dish and make it go even further if you have a smaller appetite!


Directions

-Chop onions.
-Start water to boil according to instructions on box of macaroni.
-Brown turkey in large skillet (make sure skillet has large sides, preferably a chicken fryer) and drain and remaining fat.
-Add chopped onions, Cayenne/Red pepper, and Italian Seasoning and cook and until onions and slightly tender.
-Add jar of sauce to turkey and let simmer while pasta cooks.
-Drain pasta and return pasta to pot.
-Add meat and sauce mixture to macaroni and mix well, add about half to 8x8 Pyrex baking dish.
-Cut 4 1 oz. squares of Velveeta and add 1 square to each corner.
-Cover cheese with remaining pasta mixture and top with the rest of cheese, except using 4 .5 oz squares for each corner.
-Cover with foil and bake in 350 degree oven for 45 minutes.

Makes four very hearty servings.
