Ingredients

    1 med. cucumber, very coarsely chopped
    1 med. tomato, very coarsely chopped
    2 cubic inches feta, coarsely diced
    1/4-1/2 tsp. olive oil from feta jar
    4 black olives, halved
    4 green olives, halved

Directions

Mix all together and serve.

Sometimes I throw in a little green onion or red pepper for variety. Or I add 1/4 cup rinsed and drained kidney beans for extra protein and fibre.

Yield: 2 servings.
